Egg Fried Rice

Tasty and filling Oriental classic - great on it's own too!

Ingredients

  • 4 oz / ½ cup shelled or frozen peas
  • 4 eggs beaten
  • 2 tsp Toasted Sesame Oil
  • 2 tbsp Grapeseed Oil
  • steamed rice
  • 2 tsp salt
  • ½ tsp spring onions
  • black pepper
  • 3 tbsp finely chopped spring onions, white part only
  • 4 oz fresh bean sprouts

Method

  1. Blanch fresh peas in saucepan of boiling water for about 5 minutes; simply thaw frozen peas, drain them in a colander.
  2. Combine the eggs and sesame oil in a small bowl and set aside.
  3. Heat a wok or large frying pan over high heat until it is hot.
  4. Add the Grapeseed Oil and, when it is very hot and lightly smoking, turn the heat to moderate and add the eggs.
  5. Stir-fry the eggs for 2 minutes, then add the cooked rice and stir-fry for 3 minutes, mixing well.
  6. Add the peas, salt and pepper continue to stir-fry the mixture for 5 minutes over a high heat.
  7. Add the spring onion and bean sprouts.
  8. Continue to stir-fry for 2 minutes.Turn the mixture onto a plate and serve at once.
