Garlic & Fennel BBQ Trout
A fantastic alternative to burgers for your barbecue!
Ingredients

4 trout, gutted and scaled

1 cup International Collection Garlic Flavored Olive Oil

1 lemon
-
1 orange
-
1 chopped fennel bulb
-
1 chopped red onion
-
2 tbsp capers, drained
-
2 handfuls mixed fresh herbs
-
2 tbsp chopped Garlic
-
Sea salt and ground black pepper
-
1 ft cotton string
Method

Wash the fish inside and out and pat dry.

Grate the peel of half lemon and orange, then slice thinly.

Finely blend the grated peel with fennel, garlic, onion, capers, herbs, add olive oil and seasoning.

Pack mixture into the fish and fold a few lemon and orange slices around it.

Tie 3-4 pieces of string around the fish.

Drizzle the outside with olive oil and seasoning.

Leave at room temperature for 45 minutes allowing flavors to infuse.
-
Place in single wire fish racks over medium hot coals for 15-20 minutes turning occasionally.
