Gazpacho

Ice-cold Spanish tomato-based raw vegetable soup - perfect in the summer!

Ingredients

  1. 1 lb tomatoes, skinned
  2. ½ onion, peeled
  3. 2 cloves garlic, peeled
  4. 3 tbsp International Collection Extra Virgin Olive Oil
  5. 2 tbsp International Collection Sherry Wine Vinegar
  6. 2 tbsp tomato puree
  7. 1 pint tomato juice
  8. ½ cucumber, finely chopped
  9. ½ green pepper, seeded and finely chopped
  10. Freshly ground salt and pepper
  11. Fried croutons to garnish

Method

  1. Place the tomatoes, onion, oil, vinegar and tomato puree in a food processor and blend until smooth.
  2. Pour into a bowl and stir in the tomato juice, cucumber, pepper and seasoning to taste.
  3. Chill thoroughly before serving with the croutons.
