Gazpacho
Ice-cold Spanish tomato-based raw vegetable soup - perfect in the summer!
Ingredients

1 lb tomatoes, skinned

½ onion, peeled

2 cloves garlic, peeled
-
3 tbsp International Collection Extra Virgin Olive Oil
-
2 tbsp International Collection Sherry Wine Vinegar
-
2 tbsp tomato puree
-
1 pint tomato juice
-
½ cucumber, finely chopped
-
½ green pepper, seeded and finely chopped
-
Freshly ground salt and pepper
-
Fried croutons to garnish
Method

Place the tomatoes, onion, oil, vinegar and tomato puree in a food processor and blend until smooth.

Pour into a bowl and stir in the tomato juice, cucumber, pepper and seasoning to taste.

Chill thoroughly before serving with the croutons.
