Lemon & Lime Crepes

A straightforward recipe that tastes amazing.

Ingredients

  1. 5 tbsp International Collection Lime Flavored Olive Oil
  2. 2 tsp flour
  3. ½ tsp salt
  4. 1 egg, separated
  5. 1 cup milk
  6. 1 lemon
  7. 1 lime
  8. 4 tbsp brandy
  9. 1 cup whipped cream
  10. 4 tsp crushed almonds

Method

  • Grate peel from lemon and lime slice thinly.
  • Mix flour, salt, egg yolk, milk and 1 tbsp Lime Flavored Olive Oil until smooth.
  • Whisk egg white until fluffy and fold into batter with grated peel.
  • Cover and refrigerate for 30 minutes.
  • Pour remaining oil in a pan, heat until it begins to bubble.
  • Add ¼ of crepe mixture and cook on both sides.
  • Fold crepes over the lemon and lime slices.
  • Flame with brandy.
  • Serve with sauce left from flaming and whipped cream.
  • Sprinkle with crushed almonds.
