Marinated Mushrooms

An excellent appetizer that's simple to prepare.

Ingredients

  • 2 oz button mushrooms (if large, slice thinly)
  • 6 tbsp Walnut Oil
  • 2 tbsp Lemon Flavored Olive Oil
  • 1 garlic clove, finely chopped
  • fresh parsley
  • 1 tsp green peppercorns
  • salt and pepper

Method

  1. Blend all the ingredients except the mushrooms in a processor or liquidiser.
  2. Pour over the mushrooms and allow to stand for at least 2 hours before serving as a starter with salad leaves
