Tapenade

A smooth tapenade that can be used in a variety of dishes

Ingredients

  • 2 cups pitted olives
  • 2 tbsp capers
  • 1 clove garlic, crushed
  • 2 tbsp International Collection Extra Virgin Olive Oil 
  • 1 tbsp lemon juice
  • Pepper to taste
  • Anchovies (optional)

 

Method

  1. Place olives, capers crushed garlic and achovies (optional) into a food processor.
  2. Process until smooth
  3. Leaving the food processor on, slowly pour in the olive oil until the mixture forms a paste
  4. Stir in the lemon juice
  5. Season to taste with pepper
