Tapenade
A smooth tapenade that can be used in a variety of dishes
Ingredients

2 cups pitted olives

2 tbsp capers
-
1 clove garlic, crushed

2 tbsp International Collection Extra Virgin Olive Oil

1 tbsp lemon juice
-
Pepper to taste

Anchovies (optional)
Method

Place olives, capers crushed garlic and achovies (optional) into a food processor.

Process until smooth
-
Leaving the food processor on, slowly pour in the olive oil until the mixture forms a paste

Stir in the lemon juice

Season to taste with pepper
