Fresh Fruit Salad with Orange Vinaigrette

Ingredients

  • 5 tbsp International Collection Blood Orange Flavored Olive Oil
  • 1 ½ tbsp International Collection Champagne Wine Vinegar
  • ½ tbsp finely grated orange peel
  • ½ tsp salt
  • Leaf lettuce
  • 1 medium avocado, halved, pitted, peeled and sliced
  • 2 cups fresh fruit slices or chunks (your choice of oranges, apples, kiwi, melon, bananas, pineapple)
  • Mint leaves, for garnish

Method

  1. To make the vinaigrette whisk International Collection Blood Orange Flavored Olive Oil, white wine vinegar, orange peel and salt in bowl.

  2. Line four salad plates with lettuce and arrange avocado and other fruits on top, dividing equally.

  3. Drizzle each serving with a generous tablespoon vinaigrette.

  4. Garnish with mint.
