Gazpacho

Ingredients

  • 1 lb tomatoes, skinned
  • ½ onion, peeled
  • 2 cloves garlic, peeled
  • 3 tbsp International Collection Extra Virgin Olive Oil
  • 2 tbsp International Collection Sherry Wine Vinegar
  • 2 tbsp tomato puree
  • 1 pint tomato juice
  • ½ cucumber, finely chopped
  • ½ green pepper, seeded and finely chopped
  • Freshly ground salt and pepper
  • Fried croutons to garnish

Method

  1. Place the tomatoes, onion, oil, vinegar and tomato puree in a food processor and blend until smooth.

  2. Pour into a bowl and stir in the tomato juice, cucumber, pepper and seasoning to taste.

  3. Chill thoroughly before serving with the croutons.
