Green salad with Walnuts and Stilton

Ingredients

  • Mixed salad leaves
  • 3 oz Stilton, cubed
  • 2 oz walnut halves, toasted
  • 2 tbsp chopped chives

Dressing

  • 3 tbsp International Collection Walnut oil
  • Generous ½ tbsp International Collection Sherry Wine Vinegar
  • ¼ tsp Dijon mustard
  • salt and pepper
  • pinch of sugar

Method

  1. Make the dressing in the salad bowl, whisking together the vinegar, mustard, sugar, salt and pepper, then gradually whisking in the oil, a table-spoonful at a time.

  2. Taste and adjust the balance and seasonings.

  3. Arrange the salad leaves in a serving bowl and sprinkle over the Stilton, walnut halves and chives.

  4. Mix and serve at the table.
