Lemon & Lime Crepes

Ingredients

  • 5 tbsp International Collection Lime Flavored Olive Oil
  • 2 tsp flour
  • ½ tsp salt
  • 1 egg, separated
  • 1 cup milk
  • 1 lemon
  • 1 lime
  • 4 tbsp brandy
  • 1 cup whipped cream
  • 4 tsp crushed almonds

Method

  1. Grate peel from lemon and lime slice thinly.

  2. Mix flour, salt, egg yolk, milk and 1 tbsp Lime Flavored Olive Oil until smooth.

  3. Whisk egg white until fluffy and fold into batter with grated peel.

  4. Cover and refrigerate for 30 minutes.

  5. Pour remaining oil in a pan, heat until it begins to bubble.

  6. Add ¼ of crepe mixture and cook on both sides.

  7. Fold crepes over the lemon and lime slices.

  8. Flame with brandy.

  9. Serve with sauce left from flaming and whipped cream.

  10. Sprinkle with crushed almonds.
