Nutty Prawn Spaghetti
Ingredients
- 2 tbsp International Collection Macadamia Nut Oil
- 14oz spaghetti
- 10oz large cooked prawns
- 1 clove or garlic, finely chopped
- 1 tbsp white wine vinegar
- Juice of half a lemon
- 1 tbsp tomato puree
- 1 tsp ginger, finely chopped
- 1/2 tsp sugar
- 7 tbsp water
- 5 spring onions, chopped
- Salt and pepper.
Method

Cook the spaghetti in a large pan of boiling salted water until tender.

In a bowl mix together the white wine vinegar, tomato puree, lemon juice, sugar, water, salt and pepper.

Heat the International Collection Macadamia Nut Oil in a pan and fry the garlic, prawns, ginger and spring onions for 4 minutes.

Add the sauce and heat through.

Add the drained spaghetti to the pan and coat in the sauce.
