Nutty Prawn Spaghetti

Ingredients

  • 2 tbsp International Collection Macadamia Nut Oil
  • 14oz spaghetti
  • 10oz large cooked prawns
  • 1 clove or garlic, finely chopped
  • 1 tbsp white wine vinegar
  • Juice of half a lemon
  • 1 tbsp tomato puree
  • 1 tsp ginger, finely chopped
  • 1/2 tsp sugar
  • 7 tbsp water
  • 5 spring onions, chopped
  • Salt and pepper.

Method

  1. Cook the spaghetti in a large pan of boiling salted water until tender.

  2. In a bowl mix together the white wine vinegar, tomato puree, lemon juice, sugar, water, salt and pepper.

  3. Heat the International Collection Macadamia Nut Oil in a pan and fry the garlic, prawns, ginger and spring onions for 4 minutes.

  4. Add the sauce and heat through.

  5. Add the drained spaghetti to the pan and coat in the sauce.
