Warm Bacon & Avocado Salad
Ingredients
- 3 avocados, peeled, stoned and sliced
- 8 oz streaky bacon
- Mixed lettuce leaves
- 1 green pepper, chopped
- 3.5 oz cherry tomatoes, sliced in half
- 1 small red onion, thinly sliced
Dressing
- 5 tbsp International Collection Avocado Oil
- 2 limes, juice only
- 1 tsp minced ginger
- 2 tbsp clear honey
- Salt and pepper.
Method

Grill the bacon until crisp and cut into slices.

Toss the salad leaves, avocados, tomatoes, green pepper and onion in a mixing bowl.

Arrange on plates and sprinkle the bacon over the top of the salad.

To make the dressing, put the lime juice, ginger, honey, International Collection Avocado Oil and salt and pepper in a bowl and mix well.

Drizle the dressing over the salad and serve.
